If the sound of those three words sends you reeling or, worse, straight to the nearest fast-food chain or take-out joint, then relax. Dream Dinners will change all that forever. With their new cookbook, Stephanie Allen and Tina Kuna, founders of Dream Dinners, bring the successful philosophy behind their hundreds of assemble-and-freeze-meal stores across America into home kitchens. Dream Dinners offers up one hundred recipes for flavorful meals made with easy-to-find ingredients. The premise is simple: Scoop or pour ingredients into baking pans or plastic bags, then store the uncooked dishes in the freezer. Later in the week or month, when dinnertime rolls around, just pop one of the frozen meals into the oven. Each recipe is provided two ways: One, prepare just one meal for the night, or two, prepare enough for three meals and freeze the other two. Dinner after sports practice, music lessons, and play rehearsals has never been easier! In addition to recipes for hearty, family-pleasing classics such as Baked Pesto Ravioli with Chicken, Beef and Zucchini Casserole, and Cider-Braised Pork Loin Chops, Stephanie and Tina give a wealth of time-saving shopping tips and cooking pointers. More than for convenience, eating dinner together provides benefits for the whole family. Study after study shows that mealtime matters. Families who dine together form stronger bonds, and kids get better grades and develop lifelong healthful eating habits. Dream Dinners makes it easy for families to gather around the dinner table and share the ups and downs of the day. With Dream Dinners, you will spend less time stressing in the kitchen and more time connecting with family and friends. ... | |

| | | Mexico: The Beautiful Cookbook (Beautiful Cookbook) | | Posted Friday, September 01, 2006 5:41:53 PM by BlogJeeves Team | | The drama of Mexico's tumultuous history--the rise and fall of the Olmec and Maya civilizations, the magnificent Aztec world that greeted Cortes, the arrival of the Spanish conquistadors, and the turbulent revolutionary years--is vividly reflected in the cuisine of this vast country. Mexican food is history itself, a culinary marriage of native Indian foods such as corn, beans, squash, chocolate and chiles with the Spanish contribution of wheat, rice and meats. The merger resulted in one of the world's most intriguing and least understood cuisines.Mexico the Beautiful Cookbook captures the fascinating culinary heritage of Mexico in one stunning volume. The recipes, prepared by Acapulco-based Susanna Palazuelos, represent a vast selection of authentic Mexican dishes, from all of the states of Mexico. Many of them are unusual regional dishes that have been passed along by word of mouth, such as garlic chicken from Veracruz, and San Luis Potosi's own version of enchiladas. The traditional favorites are here--chiles en nogada, tamales, pozole, tortilla soup--along with some contemporary surprises such as tequila mousse, cilantro soup and lobster crepes. With pine nut sauce. Other well-known Mexican cooks have also contributed their own special recipes to the book. All 250 recipes have been photographed by Ignacio Urquiza, one of Mexico's foremost food and travel photographers. He also provided the scenic photographs, which lead the reader through the regions of Mexico, revealing the markets, the countryside, the way the people live and eat in this varied and beautiful country. Marilyn Tausend's text provides an informative accompaniment to the recipes and photos, exploring Mexico's dramatic history through its food.Mexico the Beautiful Cookbook is the essential cookbook for anyone interested in Mexico and Mexican food.... | |

| | | I'm Just Here for More Food: Food x Mixing + Heat = Baking | | Posted Monday, August 14, 2006 1:41:49 PM by BlogJeeves Team | | Alton Brown's I'm Just Here for More Food: Food x Mixing + Heat = Baking should be required reading for those who truly want to learn how to become great bakers. In his own off-beat style Alton explains the science behind the process simply and in a manner you will not only remember, but subconsciously apply to all your baking endeavors. What is salt's role in the baking process? Why use eggs? Why is the way you mix important to overall success? Stylized and presented like his first book and popular Food Network show Good Eats, Baking is more like a goofy textbook rather then a pretty, photographed book with a bunch of recipes. If you are looking for a couple of quick, simple recipes to make cookies or bread, keep looking. If it's an education about the "Whats," "Whys," and "Hows" of baking with the intent to lift your skills to a new level: welcome! Baking is a precise science that needs to be followed to the letter if you want success. It is highly recommended to read the introduction and "The Parts Department" section before attempting any of the recipes in this book. The essence of Alton Brown's book is not to simply follow recipes, but to get a deep understanding of what is going on during the baking process. The introduction goes over the layout of the book and how it should be used (the ingenious "method flaps" for instance), the low down on how to read recipes, the importance of measuring by weight vs. volume, and baking's five core steps. The "Parts" section explains just that: ingredients. What is the chemical make up of proteins, carbs, and fats? Why is their interrelationship so important to success? How well do you know flour, eggs, sugar, and baking soda? Once you have the basics down and your parts measured it's time to get mixing. The rest of the book is smartly broken up by the six major mixing methods (Muffin, Biscuit, Creaming, Straight Dough, Egg Foam, and Custards). Each technique is explored in detail with recipes to follow. You won't find any ultra fancy recipes in Baking. The focus here is on the basics and getting the basics down right. Rediscover some old favorites like chocolate cookies and muffins, buttermilk pancakes, biscuits, shortcake, multigrain loaf bread, and good old fashioned cheesecake. There is no denying it, follow Alton's advice and you will be a better baker. Guaranteed. --Rob Bracco... | |
